Blue eryngo is a perennial that grows from Central and Eastern Europe to Central Asia in steppe, sandy grassland and dry woodland edges; it is also grown in gardens as an ornamental. Its small blue-amethyst flower heads consist of many flowers and secrete plenty of nectar. Russian and Ukrainian beekeeping sources describe it as a good summer honey plant. Thanks to its deep roots it keeps flowering in dry periods too.

Monofloral honey is not common; it contributes to the mixed summer honey of steppe regions.
It is not common in Turkey; it can be planted in gardens as a drought-tolerant ornamental. On poor, well-drained soils it is long-lived; it is a low-maintenance summer plant that can be recommended for bee gardens.
