In Fay-aux-Loges, Les Ruches de Fay offers eight varieties of honey ranging from mild to strong flavors, with their character notably linked to their color. Spring honey is mild, while Sologne, forest, and buckwheat honeys have more pronounced notes, especially chestnut for the first two.

The season was difficult for bees due to high temperatures and lack of floral diversity after a favorable spring that provided a good nectar flow. Harvests of acacia, summer, and chestnut honeys were challenging from May to June onward.

The Les Ruches de Fay operation was created five years ago by Guillaume Saulnier’s father, and Guillaume now continues the activity. Open house events in spring and autumn are held to showcase the apiary.
