Honey adulteration is one of the largest forms of food fraud in the world. It affects the honest beekeeper directly: the price is pushed down by a product that is not honey.

Forms

  • Adding syrup: Cheap sugar syrups are blended in
  • Feeding during the flow: The bees process and store syrup; what comes out is not honey
  • Harvesting early and drying artificially
  • False origin declaration
  • Blending: Cheap honey mixed into more valuable honey

Why it is hard to prove

Modern syrups are manufactured to resemble honey. Simple analyses do not see the difference, and detection lags behind the methods of adulteration.

Honey is also naturally variable: composition differs by plant, region and season. That spread makes it difficult to set a fixed limit value.

The over-filtration problem

Very fine filtration removes the pollen grains. The honey looks clearer, but the trace of its geographical origin has been erased.

In such honey the origin cannot be demonstrated. This is why over-filtration is viewed with suspicion and coarse straining is the correct practice.

Pollen analysis

Identifying and counting pollen grains shows botanical and geographical origin. Interpretation is not simple: different plants shed very different quantities of pollen, so thresholds vary by species.

What the honest beekeeper can do

  • Harvest separately by flow period and apiary
  • Strain coarsely; do not remove the pollen
  • Keep records: which apiary, which period, which forage
  • Do not feed with supers on. This boundary is unconditional
  • Measure moisture rather than harvesting early
  • Have it analysed if making a single-source claim

The strongest card: comb honey

Comb honey is the most concrete evidence of authenticity. It is not extracted, not heated, not filtered, and it cannot be blended.

For a small producer that is a defensible distinction requiring no investment.

What the customer should know

Crystallisation is natural and not a fault. It does not indicate adulteration — rather the opposite: many blended products do not crystallise at all.
