Comb honey is sold with the comb, without extraction. It can be produced in modern hives; a fixed-comb hive is not required.

Why it is valuable

• It is unprocessed. No extraction, no heating, no filtration
• It cannot be adulterated. The most concrete proof of authenticity
• It carries a high added value
• It needs no equipment. Produced without an extractor or settling tank

Conditions for production

The bees must draw fresh comb, which requires:

• A strong colony
• A strong, uninterrupted flow. Without one the bees do not build
• Mild weather
• Restricted space. Keeping the colony tight turns it to building

If these do not come together the comb is left half drawn and the product is unsaleable.

Forms of production

• Cut comb: Comb drawn on unwired thin foundation, cut into squares
• Section boxes: Comb drawn inside small boxes and sold as they are
• Mixed presentation: A piece of comb in a jar topped up with extracted honey

Choosing foundation

Thin foundation must be used; a thick midrib is noticeable in the mouth and devalues the product.

No wire is used, because the product is sold cut.

The origin of the wax also matters: comb honey is eaten directly, so wax carrying residues must not be used. Foundation made from your own cappings wax is the safest option.

Harvest

• The comb must be fully capped; uncapped cells leak and spoil the product
• The comb must not be damaged
• It softens in heat; cut it in a cool place
• A sharp, warmed blade gives a clean cut

Storage and packing

• Brief freezing: Kills wax moth eggs; common practice
• Sealed packaging: Honey draws moisture from the air
• Cool and dark
• A rigid box against crushing

The yield trade-off

Comb honey production lowers total yield; the bees build wax afresh each time and that energy comes from honey.

Against that the unit price is high and no equipment investment is needed — an accessible option for a small-scale beekeeper.
